Carne Asada Marinade: Stir together chili powder, cumin, oregano, garlic powder, onion powder, salt and pepper; rub all over steak. Drizzle olive oil, orange juice, lime juice and vinegar over top; rub mixture all over flank steak, turning to coat. Mix in onion, garlic and cilantro. Transfer to resealable plastic bag; refrigerate for at least 4 hours or up to overnight. Remove steak from marinade; let stand at room temperature for 1 hour. Transfer to cutting board; let stand for 10 minutes.

Using recipes like this Mexican chicken marinade has made my life so much easier this summer. Easy yes…. My husband would totally disagree with this statement. He likes nothing better then grilled chicken with BBQ sauce — simple and delicious. I like to freeze my chicken immediately after adding the marinade, and then defrost the bag of chicken the day I want to use it, letting it marinate while it defrosts.
Fire up the grill for these classic Mexican-style street tacos! Thinly sliced marinated flank steak is complemented with cotija cheese — an aged cheese with a salty, milky flavour — and bright accents of lime and cilantro. Seal and shake vigorously to combine.
