I love cupcakes and I love all different sorts of flavours and decorations, but I realised that I had never posted my easy vanilla cupcake recipe with pictures and method! Shock and horror!! This obviously had to change very rapidly, so here it is! The basic ingredient rules of a vanilla cupcake are:. When it comes to the frosting on a cupcake like this, I often go for the American buttercream style frosting as it really is so easy to make. If you want a frosting that is slightly different however, you can do cream cheese frosting , or a Swiss meringue buttercream — both work well when vanilla flavoured, and they all bring different elements.

Please see my disclosure for more details! If you have followed me for a while you will know how obsessed I am with hot chocolates. They are cosy, and heavenly, and because its the winter festive season I thought they were the perfect cupcake to celebrate with. Honestly, I started going to cafes purely for hot chocolates as one point because I was just obsessed. I adore them. I was a regular at a few coffee shops and they learnt my hot chocolate order very quickly. For the cupcakes I followed the same idea as my normal chocolate cupcakes because it really is a simple switch. I say to use good quality hot chocolates or even high cocoa content ones because of the flavour and sweetness. A lot of hot chocolates have a tonne of sugar added in, and this can become too sweet. I use a simple chocolate mixture of butter, sugar, self raising flour, the hot chocolate powder and eggs. I am the person that would drink a hot chocolate in the middle of summer though, so of course these beauties can be made whenever. This marshmallow frosting has become insanely popular. Whisking in the sugar syrup slowly cooks the egg whites to safe temperature. I did carried away as I always do, but sprinkling on some extra micro mini marshmallows, a little dusting of hot chocolate powder and a small flake each finished them off perfectly. I wanted the decoration of the cupcakes to represent the look of a beautiful hot chocolate, and it worked wonderfully!

I love it, I always have — and melting it to dip strawberries in is my favourite quick dessert ever. You can, of course, use other cocoa powder — all cocoa powder will work.

I decided to go for a regular chocolate cupcake recipe as I just love them, and I find them easy. And it was. I love foods like chicken satay, but thats the savoury side of things. I adore my no-bake peanut butter cheesecake.

It basically morphs the two recipes together into a wonderful, light and refreshing bake. I used your easy vanilla cupcakes recipe before for Birthday celebrations etc before but the images on the recipe and ingredients were slightly different?
