At first glance, ginger and caramel may seem like an odd pairing. The sharp bite of ginger is tamed by sallys baking addiction sweet creamy caramel. While we traditionally associate ginger molasses cookies with the winter holiday season, I discovered that they are equally delicious in summer, with a big scoop of salted caramel ice cream sandwiched between two chewy ginger molasses cookies, sallys baking addiction.

Last night was the solstice, which marks the official arrival of summer. So, obviously the arrival of a heat wave, the solstice and the summer means it is the perfect time to start messing around with making homemade ice cream, right? It was a simple three step process. Make the blueberry filling…make the crumb and then the ice cream and fold together…and it was delicious. I got home from work last night and immediately went to work…I switched out the jammy blueberry stuff for homemade lime curd and the crumble for a graham cracker version. I took a small sample to my dad…he gave it a try and said it was one of the most delicious things he has eaten in awhile…. Granted, he is a key lime pie fan…but he is not an ice cream fan…so I consider this a huge victory. I give Sally big props for creating this recipe and thank her for inspiring my little key lime tastiness. This recipe will require you to make three easy components. The first is the lime curd, then the crumble and then finally the ice cream base. Remove the pot from heat. Empty the curd into a bowl and cover the surface of the curd with a piece of plastic wrap to prevent a skin and then tightly seal the bowl with a cover or cling wrap. Mix the graham cracker crumbs, brown sugar, and salt together with a fork.
Once the cookies are scooped, I released them right into the coarse sanding sugar. For sallys baking addiction caramel corn, I started out with my favourite caramel corn recipe minus the nuts.

The cookies are pleasantly spiced with ginger, cinnamon, cloves, and nutmeg. Dark brown sugar and molasses deepen their flavor, while butter creates an incredibly soft and tender cookie. I like to roll the cookie dough in sugar before baking because it gives the cookies their holiday sparkle. Chilling helps the spice and molasses flavors to develop and prevents the cookies from spreading too much in the oven. The combination of spiced ginger and molasses with sweet and creamy frosting is out of this world! Make sure the cream cheese you are using is the brick-style cream cheese, not cream cheese spread. Cold cream cheese yields a lumpy frosting.

It was the headline of this one that got my attention. I have baked these a few times now. I used this recipe from Sally. The perfect ratio is grams of dough about 2. Sign me up. Last night was the solstice, which marks the official arrival of summer. Make the blueberry filling…make the crumb and then the ice cream and fold together…and it was delicious. That sweet-salt combo is delicious and highly addictive. It was way too hard. Excellent caramels and if you have a candy thermometer, they are foolproof! I took a small sample to my dad…he gave it a try and said it was one of the most delicious things he has eaten in awhile…. Just saying! It was the headline of this one that got my attention. Most of the recipes I found online called for a mixture of cheddar cheese powder, dried mustard and a pinch of cayenne. Such a momentous occasion called for an epic party snack. I knew immediately what I wanted to bring …. More is not always better, especially in the case of caramel. They ship worldwide and I have heard amazing things about them. When choosing the caramel to stuff into the centre of these cookies, be sure to use a good quality sea salt caramel. Add the melted butter and mix until crumbles form. The sharp bite of ginger is tamed by the sweet creamy caramel. And yes I measured with a scale. This foam contains thousands of carbon dioxide bubbles. If you like, you can drizzle and swirl some of that reserved curd and light dusting of graham cracker crumbs mid-pour and again on top of the ice cream…it makes it look so pretty and provides nice little bursts of curd throughout the ice cream. Add the sweetened condensed milk and vanilla extract, then beat on low speed until just combined. The first ingredient is the requisite cheddar cheese powder, which you can buy at Bulk Barn , or online , or just rip open a bag of the powder that comes in the box of KD. Add the butter a tablespoon at a time until melted and curd becomes smooth.
